Bird’s eye-Are thin fleshed with a deep fiery heat. Flavour varies from mild to sweet. Colour range from red to cream, yellow or orange. Used in Thai salads and noodles dishes.

It’s consumed as a delicacy, medicine or spice. They can also be steeped in boiling water to make ginger tea. Ginger can also be made into candy or ginger wine.
